My ball shaping was hurried as I was trying to get these into my belly ASAP

Monster Energy Bites – I’ve been making these often since my friend passed me the recipe. They’re SOO good, definitely the best energy balls I’ve made. I think the dates make all of the difference, giving them a great consistency and sweetness without any honey or added sugar. The original recipe calls for dark chocolate but I was really craving Monster Cookie Dough so I swapped out mini M&M’s and I highly recommend it. I’ve also added flax & hemp seed, and it mixes in great. Find the base recipe here!

Ingredients
  • 1 cup dates, pitted (if dry, soak in warm water for 10 minutes, then drain well)
  • 3 Tbsp all natural salted peanut or almond butter
  • 1/4 cup dairy free dark chocolate, roughly chopped —-This is where I subbed m&m’s
  • 1 Tbsp chia seeds (or sub flax or hemp seeds) —or do all three!
  • 2/3 cup rolled oats
 
Instructions
  1. Pulse dates in a food processor or blender until they’re in small pieces or it forms a ball (see photo).
  2. Add oats, chocolate, chia seeds and peanut butter and pulse or mix until combined. You want there to be consistently small pieces but not overly processed.
  3. Carefully roll into 1-inch balls (29-30 grams per ball), using the warmth of your hands to mold them together. Should yield 14-15 balls.
  4. To set, pop in fridge or freezer for 15 minutes. Otherwise, eat as is! Will keep fresh in an air-tight bag or container for up to a week. Freeze for longer term storage.

two.

Pregnancy update – I’m now 29 weeks and just started feeling more pregnant a couple of weeks ago – all at once. This didn’t happen my first pregnancy, but it felt like I was cruising along and then right around 27 weeks it was like WOAH. I’m pregnant. Luckily it comes and goes, I was worried that I was already pretty uncomfortable so early, but it’s definitely worse at night, after dinner. Otherwise I had my last OB appointment at the University of Iowa last week and was so sad to say goodbye to Dr. Ward, my OB. She’s so great! But I’m excited to meet my new one in a couple weeks and have gotten many great recommendations on her.

Weelicious Cook The Book – My friend hosted a great event this week, she asked everyone to pick a Weelicious recipe they’d like to try, make it and bring enough to share. Then she had everyone and their kids over for lunch and to play. It was such a success! We got to try so many amazing recipes – seriously I liked them all – and the kids had a well rounded meal (even Leah ate a good amount!) and played until exhaustion, right before naptime.

I made the Veggie Dinner Strata – and I’ll definitely be making it again, it was packed with veggies and the whole family – toddler included – loved it for more than one meal. A couple other favorites were the Easy Chicken Curry (I think I had thirds of this), Green Mac & Cheese, and Veggie Nuggets – although these had quite a few steps, if you are going to make them I’d make a bunch and freeze them for several meals.

Motherhood Maternity Rentals – I exchanged most of the clothes I rented the first time around, some of which didn’t quite fit, some I won’t wear as the weather gets hot in summer (button downs, etc.), and a few dresses that I’d already worn to a special occasion and wanted to swap for something new. I think I did a way better job selecting clothes I can wear more day to day in this round – like many casual summer dresses. Anyway, I also learned that I was missing a ton of great options by using the sort features and selecting gently used. You’re better off paging through to find the items not labled as New (becuase you can’t rent those) and picking what you like. 

The striped dress in #2 is a rental dress I wore for date night last week that was just a bit too tight to keep as I get bigger, but was fun and really comfy!

five.

Anniversary – Yesterday marked 4 years! Can’t believe it’s already been that long, it seriously feels like just yesterday we were getting married, moving into this house and unpacking our wedding gifts. Now we’re packing them back out and in 2 weeks we’ll be loading the moving truck and saying goodbye to our first home! I know I’ll be a wreck even though I really am excited for the next chapter in our lives. But it’s amazing how time flies!
