5 on Friday

One of my favorite blogs, Carolina Charm always does a 5 on Friday. It’s just a quick list of 5 fun things each Friday. I can’t promise that I’ll do it every Friday, but I thought I’d do it today with my favorite easy breakfasts.

One. This morning I’m enjoying for the second day in a row a yummy fruit smoothie. Leah loves these too and on mornings when a heavy breakfast doesn’t sound great, smoothies (protein shakes as Leah calls them) are an easy breakfast.

Smoothie, coffee and a very unstaged glimpse at our morning…Leah’s watching her episode of Daniel Tiger and drinking her milk while I get some stuff done.

Strawberry Banana Smoothie: Blend together 1 banana, 1 cup strawberries (frozen work great!), 1/2 cup spinach or kale, 1/2 scoop vanilla protein powder and 1 -2 cups unsweetened almond milk. You can also squeeze in a teaspoon of honey if you’d like.

Chocolate Peanut Butter Protein Shake: Blend together 1 banana (preferably frozen), 1 scoop chocolate protein powder, 1-2 cups unsweetened almond milk, 1 tablespoon peanut butter powder (peanut butter works great too)

Two. Special K Protein Cereal with Bananas. This is my go to for most mornings, the cereal is good on it’s own but I really like it best with Bananas. Leah and I usually end up sharing a bowl.

Three. Weelicious Cottage Cheese Pancakes. I love these, possibly more than Leah does. But they’re so good! And they have very little flour in them, so they’re pretty healthy. The combination of the vanilla in them and the butter you use to grease the griddle always makes me thing of State Fair funnel cakes. I eat them plain or with strawberries on them, Leah prefers with syrup.

Four. Blueberry Banana Steel Cut Oats. These are a weekend breakfast favored by Mike. They take a little longer to make but are pretty tasty. Here’s how I make them: boil 1 cup milk, 1 cup almond milk, 2 cups water and a pinch of salt. When it comes to a boil add 1 cup steel cut oats. (At some point this inevitably boils over, no matter how closely I watch so just be warned!) Boil until most of the liquid is gone, I like it a little on the soupy side. Just before you take it off add a cup of frozen blueberries and 1 mashed up banana. Serve with a little Truvia or on it’s own!

Five. Dr. Praegger’s. We buy whatever variety is in stock at Costco, which has included the Kale & Quinoa Veggie Burgers, and the Spinach Cakes, both are a necessity at our house. They taste so good, you just pop them in the microwave and you have a pretty healthy breakfast on their own, or you can eat them with eggs like Mike does EVERY morning. And most evenings for a snack at some point. Find them in the frozen foods section at Costco near the beef burgers, or frozen organic foods at the grocery store.
