Is it just me or is it really hard figuring out what to feed yourself for lunch? Since I stopped going to an office all day I noticed that lunch has become a challenge, and I often end up eating random (usually unhealthy) snacks or a my go-to: a quesadilla. Leftovers are usually sent with Mike to work, but sometimes there’s a little stray quinoa in the fridge and recently I’ve been mixing in whatever veggies are in the fridge to make a healthy and tasty lunch.
Today we had a bulgar quinoa mix leftover. I chopped veggies and mixed up a honey-lime vinaigrette and it was so good! So if you need some lunchspiration, try this, or make your own version with whatever you have and let me know what you think!
Cilantro Lime Quinoa Salad
- 2 Cups Bulgar Quinoa Mix (or plain quinoa) cooked and cooled
- 1 Bell Pepper, diced
- 2 Green Onions, chopped
- 1/2 Cucumber, peeled and diced
- 1 Jalapeño, diced
- 1/2 Cup Cilantro, chopped
- Juice of one Lime
- 2 Tbs Honey
- 1/2 Tsp Cumin
- Salt to taste
Chop up all the veggies, whisk the vinaigrette and toss it all together. Voila!
This makes enough for a small lunch for 2-3 days.
