Someone has been a little different lately…and it’s not me, and it’s not Mike. Ok I’ll just say it, it’s Leah. I was beginning to research exorcists until my parents pointed out that with the runny nose, drool, lack of appetite and sleep refusal she’s probably teething. Joy. I mean I would be lying if I said I wasn’t relieved to have something to blame the insanity on. Teething you say? Yes, it’s definitely that. Anything to reassure me that it’s not my parenting skills, her personality, or demonic possession. Jk!! But seriously.
Anywho, I’m running low on my patience reserves as well as my desire to do put forth more than the minimum effort. So last night, I decided I just couldn’t cook. But I could open cans. So that’s what I did.
Lazy Burrito Bowls
- 1 Can Rotell
- 1 Can Black Beans, drained
- 1 Can Corn, drained
- 2 Chicken Breasts (mine came directly out of the freezer bag)
- 1 1/4 Cup Chicken Stock
- 1 Cup Quinoa
- 1/2 tsp garlic powder
- 2 tsp cumin
- 2 tsp chili powder
- Salt to taste
Throw everything but the quinoa into a crockpot. Cook on high for 2-3 hours, depending on your crock pot, just check that chicken is cooked through and tender. Shred chicken with forks and add quinoa. Cook for 30 more minutes, or until quinoa is ready. Serve like a burrito bowl; we like it with cilantro, cheese and hot sauce.
It’s pretty easy, but to be honest I usually use fresh onions and bell peppers instead of anything canned. However, this totally hit the spot and I didn’t chop a thing. Score. The bonus here is that this makes a lot, so Mike and I are both able to eat it for lunch the next day.
